A Spiced Honey Winter Gin Fizz

It gets dark at 4pm and you can’t seem to shake the chill from your bones, even though you just took stock of what you’re wearing and it seems to be three puffy jackets and a scarf from a Dutch soccer team you’ve never heard of.  Obviously, it is time for a wintery gin cocktail.

Try our Bridgeway Fizz to leaven the spirits.  Make a quick, devilish little spiced honey syrup, throw in a few firm shakes of good bitters, and lean on that bottle of pomegranate juice that you only buy for occasions such as these. The botanicals in the Marin Coastal Gin will do the rest.

Ingredients for Spiced Honey Syrup:

1/2 cup honey

1/2 cup water

1 cinnamon stick

3-4 cloves

A small piece of fresh ginger, thinly sliced

 

Ingredients for the Cocktail:

2 oz Marin Coastal Gin

1 oz pomegranate juice

0.5 oz spiced honey syrup

0.5 oz fresh lemon juice

2-3 dashes of aromatic bitters (Angostura anyone?)

2 oz club soda

Maybe pomegranate seeds, a cinnamon stick, an orange twist for garnish?

 

INSTRUCTIONS

Make the Spiced Honey Syrup: In a small saucepan, combine honey, water, cinnamon stick, cloves, and ginger. Bring to a simmer over medium heat, stirring until the honey dissolves. Simmer for 3 minutes, then remove from heat and let cool. Strain out the solids.

Mix the Cocktail: In a shaker, combine the gin, pomegranate juice, spiced honey syrup, lemon juice, and bitters.  Add ice and shake until your hands are frozen to the tin, like that kid’s tongue to the flagpole in A Christmas Story.

Fill a highball or Collins glass with fresh ice and strain the cocktail into the glass.  Get fizzy and top with club soda.  Garnish with pomegranate seeds, a cinnamon stick, and an orange twist for a festive and aromatic presentation.  Or simply don’t.  Who cares, in the end?
